Move over, mulled wine. This spiced Scottish-style ale delivers an abundance of holiday cheer. A medium-bodied, malty, clean ale provides the perfect base for a complex blend of spices guaranteed to warm your spirit.

Before hops became the conventional flavoring for beer, medieval European brewers used proprietary spice mixtures, and many modern breweries still use a blend of spices along with hops for seasonally-brewed holiday beers. In this recipe kit, we started with a Scottish-style ale and added a blend of spices and quality ingredients to create a delightfully sippable beer with a sweet, exotic spice character reminiscent of mulled wine.

Excellent holiday brew. I've brewed this kit many times. I prefer to put the spices in the secondary fermenter.

I had to let it condition for almost 2 months for the flavor to really come out, but that was just in time for Christmas, so it worked out. My wife, who doesn't like beer, liked this one, even. Has a nice even flavor, not too malty, not too bitter, and there is just enough spice to give it that holiday feel. I would do again for a holiday brew.

Good. But not quite what I was Hoping for. (Read Description).

I usually order this brew kit every year and get consistent results that I am happy with and enjoy the ale of Christmas for me. However, I typically use Wyeast Liquid Scottish ale yeast, but this year I tried the dried yeast option and the slight change didn't sit well with me. Differences include: a stronger pull on the spices and a more dry palate and the dry yeast's lifecycle seem to accelerate and die quickly. I kept my same timeframes for racking to second and bottling but this year my carbonation level was very low. Going forward I'll be sticking to the liquid yeast options.
