Campden Tablets are easy-to-use capsules of potassium metabisulfite; use to prevent oxidation and growth of wild yeast and bacteria in must. One tablet in one gallon of must yields 75 ppm total sulfur dioxide. Crush into a powder before using. Some beer brewers also use campden tablets to remove chlorine or chloramine from their brewing water.

The plastic side walls seem a bit on the thin side to me. Not something that would concern me in general but with the spigot sticking out of the side near the bottom I made sure to place the fermenter on a shelf instead of on the floor exposed to foot traffic. I really like the 3 gallon size for trying new things.
