Soda Extracts
Homemade soda is economical and, like good
homebrew, fresher and more flavorful than what you can buy
in the store. Best of all, it's very easy to make - no
boiling, no lengthy fermentation. Mix the soda extract with
hot water and sugar, then package it right away.
A five or three gallon soda keg is an ideal vessel
for homemade soft drinks: not only do they taste great on
draft, they can be carbonated on the spot. For bottling,
soda makers will need to add dry champagne yeast (Item
#Y151) to produce carbonation, and use plastic bottles
and caps (#40113 and #40128).
It is dangerous to use glass bottles - only use
plastic!

Safety Note:
Homemade soda is unlike beer or wine, where the levels of
carbonation are carefully controlled. We strongly advise
against bottling in glass because fermentation and pressure
buildup will not stop until the bottles are
refrigerated.
