The historical yeast for German wheat beers.

Fermentis SafAle™ W-68 is a world-renowned yeast strain coming from Weihenstephan in the north of Munich area, it’s the yeast you need to brew the classic wheat beer styles that only Germany can offer: Hefeweizen, Dunkelweizen, Weizenbock, etc. Considering the Reinheitsgebot rule in Germany, this yeast has been selected to express by itself, without the addition of any other ingredients, a balanced banana and clove profile. Expect aromatics with prominent banana / tutti frutti notes and a moderate phenolic flavor. Phenol clove notes will be brought out naturally with the high percentage of wheat contained in German wheat beers recipes.

Great banana esters when fermented around 75

Bought this to make hefeweizen and it performs very well. No issues, no yeast starter or soaking, just straight into the wort around 70 and it kicked off within about 6-7 hours, fermented vigorously for a couple of days and produced a fantastic banana flavor when fermented in the mid 70s. I haven’t tried cooler fermentation with it yet, but I’ve read that’s how you reduce the banana esters if they aren’t as desired
