“Hard seltzer waters are all the rage these days, so why not ride the wave? This kit is a very simple and straightforward fermentation consisting only of dextrose (corn sugar). The resulting product is boozy water, coming in right at about 5.5% ABV and is then flavored with all-natural crystallized blackberry powder.

To ensure the best results with this kit, be sure to follow the directions and add the yeast nutrient packets according to the schedule described. Adding yeast nutrients in staggered additions ensures that the yeast remain happy and healthy and will avoid any off-flavors that stressed-out yeast can generate.

The fermentation will be complete within 2 weeks or so, but be sure to leave this batch sit for a few additional weeks to allow the yeast to drop out of solution and leave behind a clear beverage.

We have also included more flavoring than likely needed, so you can decide how intense to make the flavor - add a little at a time and taste until you are happy with the taste."

No mater what your taste, hard cider brews the same. Add your preferred flavor before bottling.

You can even split your batches into two containers, bottling half with one flavor and half with another. Do the same on your next brew.

Poor Yeast Performance

I'm in Oregon, so it takes a full week to get delivery from NB and it was hot July weather. The yeast didn't travel well, I guess. It took 3 days to show ANY sign of active fermentation. After 17 days it had only reached 1.010 gravity. At that point I was out of patience and bought another yeast at my LHS - Mangrove Jack Hard Seltzer Yeast/Nutrient (they didn't have the same yeast that came with the kit). It took off like a hurricane and finished the fermentation in less than 4 days - FG 0.998. The seltzer tastes great but there's a residual unpleasant yeast aroma. I thought it might condition out after kegging (it did a little) but it's still there and distracts from the flavor. This was my first seltzer. I'll give it another go in the Spring. Hopefully the yeast will travel/perform better. Note: I purchased 2 packages of Safale 04 for a 10 gal batch of beer (in the same order) and it was fine.

The yeast never activated long enough to ferment. Bought more yeast and it was too late. Going to dump the batch this weekend.
