Grown in the Bighorn Basin of Wyoming and Montana, this heirloom barley undergoes a traditional malting process, including a five-day germination period. It imparts a complex bread character with subtle notes of honey, biscuit, and floral nuances, making it perfect for a wide range of beer styles.
