Citric Acid can be used in sanitizing solutions to lower the pH, which will make the SO2 level more effective. It is also used to increase acidity at a ratio of 0.1% for each teaspoon per gallon in wine. Be careful with how much you add to your wine because you will get a very tart flavor if you use to much.

I've come to rely on NBs citric acid. Not only do I use it for brandy, I also use it in my jewelry studio. It's a great mild acid for clean up after soldering. One product for two purposes.
It is impractical to have one pound of this stuff in a plastic bag that can't be resealed. Other similar products are in a zip lock bag. Suggest this be considered. I too have been hounded to do a review for this product; big whoop. Wish you did a better job of getting reviews for your beer/wine kits AFTER folks had a chance to consume/taste them.
Elegant Bastard is a wonderful brew and I will brew it again. The kit contains one pound of corn sugar which serves only to increase the alcohol content. I would replace this with a pound of dry light malt extract.
Please stop asking me about the citric acid. Three times. It's only citric acid.
