Pleasant, subtle aromas and flavors of raisin, cinnamon, and vanilla engage with the velvety body of a traditional oatmeal stout to create an immensely pleasing and highly elaborate sipping experience.

 Tasting Notes:

  • Aroma: Slightly roasty nose with no hop aroma. Scents of vanilla, cinnamon and raisins are prominent
  • Appearance: Nearly jet black in color with deep garnet and ruby highlights, good clarity. Firm and persistent khaki-tan head forms easily and laces down the glass well.
  • Flavor: Clean malt background flavors with a faint nutty and biscuity character are layered with a slightly chocolaty and roasty flavor. Moderate-low hop bitterness. Clean fermentation with subtle fruity esters. Flavors of cinnamon, raisin and vanilla persist in the finish.
  • Mouthfeel: Medium body with moderate carbonation. Low alcohol warmth with smooth creaminess and no astringency.
  • Overall Impression: A complexly flavored stout with surprising flavors of freshly baked oatmeal raisin cookies.

Prunes over Raisins

This is the most complex recipe that I have followed with many steps and things to prepare. The directions provided assume that this is not your first rodeo in all grain brewing and know generally what to do. I spent some time reviewing all the steps and gathering more information, but ensured I was set up for success before I began.

I used a double oaked rum to soak my ingredients, the rum was delicious and I was surprised by that as it was a cheap bottle. The recipe calls for raisins, which I don't mind, but others have strong feelings about dried fruit. Since I was going to hide the fact that there was dried fruit, I went bold and earthy by using prunes. I also used more cinnamon than recommended, but that was a good choice as well.

I spent 60 mins cooking the grains and then sparged going right into boil. There was more foam in the boil than normal, but that was due to the oats. I added the prunes and hops to the boil according to the times indicated, then cooled to add vanilla and cinnamon in primary.

The yeast was aggressive and fermented out in less than a week. I used KC Finings in primary at day 9 and kegged on day 10. First pour was clear and delicious on Christmas Eve. I shared on Christmas Day with family who raved over the flavors and textures of the stout.

I will definitely buy this again! If you do make this make sure to get raisins ahead of time because I forgot to and had to make an emergency run for raisins.

oatmeal stout

was a very easy build, big yield, I didn't have any raisins to add, but did have some homemade dark rum vanilla, so I soaked the cinnamon sticks in that with the powdered sugar and let marry for 2 weeks before putting into the secondary. I let that soak for 8 days, then bottled. Yum!!!!

A Christmas Holiday favorite

This is a great oatmeal stout. The cinnamon and the vanilla really bring out the cookie flavor along with grain bill selected with this kit.
