Once upon a time a poor homebrewer was lamenting the lack of time that the modern world allowed him for his hobby. He had the ingredients for a batch of Tripel and a batch of IPA, but the demands of home and work life were such that he had no opportunity to brew them, and so he cried himself to sleep. While he slept, a collective of Ardennes Forest Beer Gnomes (Houblonmonstres, in Flemish) came into his house and took pity on the poor homebrewer. They decided they'd brew his beer for him. Unfortunately, the Gnomes were already three sheets when they broke into his home, and so they combined the ingredients for the two batches. This recipe is the result of their drunken meddling: an elegant and pale strong abbey ale carpet-bombed with American and continental hops. You're going to have to do the brewing yourself, though.

Due to the high starting gravity of this kit, we recommend pitching multiple packs of yeast or preparing a yeast starter for best results.

Well Balanced Tripel

Nice recipe Houblonmontre

Nice balance between malt and hops, not too hoppy, my 5 gal is 8 % alcohol. Maybe should mash longer. Did two weeks primary starting 64 degrees 2 days and 69 degrees 12 days, secondary two weeks and bottle conditioned 3 weeks. Used Irish moss in boil and clarity is great, nice caramel color to beer.

Takes us back to our trip to Brussels

In 2019, we took a day off from our business trip for a pub crawl in Brussels. From Delerium Tremens to the oldest brewery in Belgium, we tasted some of the best Belgium had to offer. The Houblonmonstre Tripel IPA takes us back both in aroma and flavor! Absolutely worth the fermentation and aging period to enjoy a well balanced Tripel straight out of the Abby.

I make this at least once a year. NB also sells a variant, Citramonstre - it's also a great beer. Always a favorite with friends and family!

Turned out just as advertised.

Taste is great which is mostly triple like but with a stronger European hop presence than most Belgians. I used the Ardennes yeast from Wyeast with a starter and that yeast works like a champ. I have used this yeast before and fermentation is fast and attenuated down to about 90%. I started fermentation at about 64 degrees and had it ramp up to about 70 by the end of a week. Great Belgian flavor too. I would brew this recipe again.
