Cara Ruby Malt
Montana Craft Malt’s Cara Ruby Malt is crafted using a specialized kilning process with high air recirculation, mimicking the saccharification rest found in mashing. This technique enhances the development of deep, rich melanoidin flavors, contributing to a warm, malty sweetness.
With copper hues and flavors of sweet graham cracker, caramel, and biscuit, Cara Ruby Malt adds depth and complexity to a wide range of styles. Typically used at up to 5% of the grist, it can be pushed to 15% for bolder malt character.
