Powerfully, richly dark purple in appearance with a smooth and satisfying mouthfeel, Oregon Fruit Blackberry Puree is no shrinking violet. The nose features aromas of plummy sweet fruit with an underlying summer earthiness. This puree’s dark, jammy berry juiciness will impress in any beverage. The real fruit color, aroma, and flavor adds complexity to beer, cider, mead, wine, kombucha, seltzer, smoothies, and spirits. The product contains no preservatives and no additives.

100% Fruit Puree can be added directly to the primary or secondary fermentor - do not boil.

How do I calculate how much fruit puree to add if I have been using whole fruit?

The seeds make up 12% of the whole berry by weight and pits make up 20% of the fruit weight. In general, we recommend using 10-15% less puree if your recipe calls for whole fruit.

Versatile Product

Used this puree to make three gallons of wine and to flavor apple cider. Has a significant amount of pulp which required filtering to allow wine to clear. Initial tasting of wine was great. Good flavor and color. With conditioning this should be a nice wine. Used the puree to flavor half a batch of apple cider. Nice. Will definitely use this again in the future.

Added the blackberry puree at transfer to secondary fermenter. Caused aggressive fermentation for a week. Fermentation has nearly stopped, but the beer is cloudy.
