This strain produces complex esters balanced with earthy, spicy notes. Slightly tart and dry with a peppery finish, it the perfect strain for farmhouse ales and saisons.
Beer Styles: Saison, Biere de Garde, Belgian Blonde Ale, Belgian Pale Ale, Belgian Golden Strong Ale

*NOTE:*During summer months, we include complimentary ice packs will all liquid yeast orders. However, it is difficult to guarantee that the ice packs will stay frozen given transit times and particularly hot temperatures. For this reason, we recommend ordering dry yeast during summer months.

AMAZING

I used this yeast in a 1.055 Farmhouse Stout from the second runnings of a Kate the Great RIS, and this has fully exceeded expectations. It went down to 1.010 and is delish... Earthy and complex, smooth and lingering. Its an absolute delight to use and enjoy the fruits of your labors. I made a big starter and it went nuts... a blowoff was NECESSARY. I wish I had washed it to keep it around longer. :(

Best Saison/Farmhouse strain

Better than the Dupont strain. Doesn't stall out. Classic Saison/Farmhouse smell and peppery tingle. Not quite as dry as the French Saison strain. I've used this with excellent results with OG ranging from 1.035 to 1.056. Just perfect...

Better than Dupont, and less fussy

This may very well be my all-time favorite yeast, and I'm so happy to see Wyeast offering it again. I've been writing them every six months since they last offered it (back in 2007) to ask for it back. According to Mr. Malty, this is most likely the Blauges yeast strain, and according to Farmhouse Ales, a decedent of the Dupont strain. Unlike the Dupont strain however, you can expect good attenuation in a reasonable period of time, and with fantastic spicy yeast notes. How this yeast isn't part of the permanent Wyeast lineup is a complete mystery to me. But I am buying 5 packs now, in the hope I can ration them out until Wyeast offers this again.
