Product details

Produces Saison or farmhouse-style beers that are highly aromatic with clean citrus esters. Expect peppery and spicy notes with no earthiness and low phenols. This strain enhances the use of spices and is extremely attenuative but leaves an unexpected silky and rich mouthfeel in a very dry finished beer. Apparent attenuation: 77-83%. Flocculation: low. Optimum temp: 65°-77° F

NOTE: During summer months, we include complimentary ice packs with all liquid yeast orders. However, it is difficult to guarantee that the ice packs will stay frozen given transit times and particularly hot temperatures. For this reason, we recommend ordering dry yeast during summer months.

Is it the fault of the yeast or my execution?

I used one package of Wyeast 3711 to ferment the Lemondrop Saison all-grain recipe (5 L). The starting SG was 1.080 and was reduced to 1.030 over the course of one week. I ordered another package of the same yeast and upon receiving it, I placed it into a solution of re-hydrated DME to grow up the yeast count. After about 36 hours, I moved the suspension to the fridge. After an overnight to precipitate the yeast, I poured off the excess solution and allowed the yeast to adjust to room temperature before pitching/swirling into the fermenter. After several days. no change in the SG was observed. So was the 2nd batch of yeast bad or was my execution during the wort preparation the cause that I couldn't get the SG down to 1.010 or so?
