Halcyon starts with raw Kansas wheat in the grain bill to give it a nice edge, but what really makes it shine is the hops - Tallgrass uses the "hop bursting" method late in the brewing process to give Halcyon its palate of tropical fruit flavors & aromas with a bright and refreshing taste.

Tallgrass originally brewed Halcyon as their first summer seasonal, but since all the Halcyon fans (a.k.a: kiteheads) asked so nicely, they now brew this magical brew year round.

In addition to the equipment required for malt extract brewing (boiling kettle, primary fermenter, siphon, etc.), you will need the following to brew our partial mash kits:

  • thermometer with a range that includes 120°-170°F
  • mash kettle - a pot with a capacity of at least 4 gallons (the boiling kettle you already have can do double duty)
  • A second pot or kettle with a capacity of at least 2 gallons for heating sparge water
  • large strainer or a nylon mesh bag that can hold up to 5 pounds of wet grain (used to separate the grain from the mash liquid in Step #8)

A note on yeast: Tallgrass uses White Labs WLP007 Dry English Ale; with Tallgrass' blessing, we suggest Wyeast 1098 as the default option so customers (especially mail order customers) can more easily evaluate viability before brewing.

It was easy to brew, and it tastes great, but it's totally the wrong color

I thoroughly enjoyed brewing this, and it tastes great. But, it's FAR too dark for the style. I guess I'll just call it a dunkelweizen. Problem solved.

Good beer

I would brew this again. Light body, slightly hoppy but not too bitter, although color came out much darker than pictured. OG 1.049 to FG of 1.016 (a few points too high). Made a starter with Imperial A01 House yeast and decanted. Force carbonated with 12psi for 2 weeks. This partial mash encouraged me to go all grain BIAB. Not too much different!

Outstanding Wheat!

Been extract brewing for about a year and a half and this was my first partial mash. Very easy to brew! I used a small cooler to hold the mash at temp for an hour and then poured through a pasta colander into my brew kettle and sparged over that, so no need to buy any special equipment. The beer has a nice fruit forward taste and aroma. Very drinkable and gave me confidence to try another partial mash (elevenses brown ale) on my way to maybe full grain brewing in the future.

It was easy to brew, and it tastes great, but it's totally the wrong color

Good beer
