The Thiolized process enhances a yeast’s ability to biotransform compounds found in malt and hops to unleash thiols — flavor- and aroma-active compounds reminiscent of grapefruit, passion fruit, and guava. Omega Yeast has been up to some serious sorcery when it comes to novel yeast strains. The pure biological alchemy taking place in their laboratory (I can only assume it is an enchanting alcove chock-full of dazzling curiosities generally only observed within the confines of Hogwarts) has taken the otherwise mundane domain of saccharomyces to dizzying new heights. Omega's Thiolozed® yeast series leverages a specific gene present in brewer's yeast to produce an enzyme allowing for the production of thiols (aromatic and flavorful compounds) to substantially increase sensory perception of compounds abundant in malt and hops that would otherwise go unnoticed. These strains of thiolized yeast produce bouquets of tropical fruit flavors and aromas, notably grapefruit, passion fruit and guava with ease.

With this incredible new tool now nestled in our bag of brewing tricks, we slinked off into the brew cave, firmly affixed our thinking caps, and brainstormed over a few pints on the best way to showcase the splendor these yeast strains have to offer. After a few sips of a very fruit-forward hoppy IPA, it dawned on us - we already had the answer in our arsenal of beer recipes. Shining down upon us from the fleecy clouds of homebrew heaven, we were treated to grandiose visions of an apropos marriage between Swig of Sunbeams and Omega Yeast's Thiolized yeast strains. It turned out to be a harmonious union, with Swig of Sunbeams offering an already profound sensory experience, only to be buttressed by a veritable infantry of newly freed thiols.

Introducing Omega Yeast's Cosmic Punch™

When choosing one of these new thiolized yeast strains, there are a few factors to take into account. First is the overall flavor and aroma thiol intensity produced by these strains. Due to the methods used to produce them, Star Party, Lunar Crush, and Helio Gazer will produce the most sensory compounds, while the original, Cosmic Punch, will be a bit more subdued but will still result in a huge increase of free thiols. Together with the already potent flavors and aromas of Citra® hops, there really is no wrong way to go here. The second factor to consider is the behavior of the parent yeast strains that these thiolized versions are born from. Because the only changes to the yeast are the addition of thiol-producing genes and enzymes, the fermentation kinetics remain the same as the parent strains. For instance, Cosmic Punch and Helio Gazer will behave just as you would expect British Ale V to, while leaving the characteristic persistent haze so crucial to the NE IPA style. Star Party's parent is the classic Chico strain, so expect the same attenuation, flocculation, and flavor profile of OYL-004, but with massively increased thiol productions. Lunar Crush, on the other hand, is based on OYL-113 Mexican Lager, so be sure to pitch an appropriate amount of yeast and ferment at the traditional cool temperatures.

My Best Tasting Brew Yet!

I'm an IPA lover and decided to give this one a try. I inadvertently ordered mine with one of Omega Yeast's Thiolized yeast strains (Cosmic Punch) not realizing it was liquid yeast. I did want the Cosmic Punch, I just overlooked the fact it was liquid. I've purposely not used liquid yeast in the past as I only brew in the Summer and I've also read previous disclaimers about how difficult it is for Northern Brewer to ship liquid yeast and still keep it cold. I found out why it's risky to order liquid yeast in the Summer. It arrived with the ice packs no longer frozen,in liquid form, and warm- YIKES!

Upon opening, I found one packet bloated and the other flat. Thinking that the flat one had not yet been activated, I took the chance and tossed both packets in the fridge and decided to brew the next day to use ASAP.

The next day (brew day), prior to creating my wort, I took both yeast packs out of the fridge to warm up. It also came to light that when I opened the fridge, I could smell fruit "notes" and then realized that the flat pack of yeast was leaking leading me to believe that that particular pack HAD also, most likely, been activated like the other one, but most likely burst in transit. I wasn't sure that

A) That the yeast was still good and
B) If it was still good, would I have enough yeast left to ferment my brew.

So, during the brew process, I boiled a couple cups of water with corn sugar and added the yeast to boost activation.

Bottling day = O.G. measured as expected and F.G. came in as expected as well to indicate ABV 8.7%. Two weeks later, here I am opening my first bottle. Aromatically, lots of fruit overtones and the taste is similar. A nice "bite" with the typical IPA aftertaste bitters that I crave. Mouthfeel, for a hazy IPA, is not quite as pronounced given the visuals but I am not disappointed in the least! I love the taste, texture, and follow-through. I will buy and brew this again!

Swig Of Sunbeams is my Go-To Favorite IPA!!!

I've been enjoying Swig of Sunbeams (S.O.S.) from NB for years. I make 20 to 25 gallons of S.O.S. every year so I knew I had to try the thiolized yeast version. I used a can of Fast Pitch to make a 32oz starter with Omega Star Party yeast and pitched to an oxygenated wort. Three weeks in the primary then transferred to a corny keg. After 1 week in keg my first taste test was good but needed a little more development. At the 2nd week the taste was very good and now on the 3rd week the taste and mouthfeel are simply superb. The aromatics, while very good, are not as pronounced as I thought they would be with this new thiolized yeast but I am not complaining at all as the beer still smells wonderful. Honestly this is one of the best beers I have ever had. Well done Northern Brewer!

I just kegged this today (1/8/24). The taste I've had of it is very delicious and juicy! I can't wait until it's cold and carb'd, it'll be even better. Finished out right at 8.5% ABV.

Swig of Sunbeams IPA paired with the White Labs Tropicale yeast was my first of many brews. Tastes like it was brewed by someone who knows what he/she is doing.

The perfect haze

I highly recommend Thiolized Swig of Sunbeams. As per usual for NB the recipe was easy to follow and created a great beer. I used a yeast starter which I would certainly recommend. My friends have weighed in and consensus is "I would pay for this at a bar and bye another round." Fortunately for them, I can always make more.
